Banana, Mango, Apple Rice Kugel image

Steps:

  • Add all of the ingredients and mix well.
  • Put in well greased casserole dish.
  • Cover and bake for for 1 hour at 350°F, mixing half way through.
  • Top with additional cinnamon, sugar, and coconut flakes to taste last 15 minutes (uncovered).

3 cups cooked rice
4 tablespoons butter, melted
1 1/2 heavy cream
3/4 cup raisins
1 large banana, sliced
1 mango, diced
1 apple, peeled and chopped
1/8 teaspoon salt
5 eggs, well beaten
3/4 cup sugar
1 tablespoon cinnamon
coconut flakes

Rice Kugel (Reis-Kugel) image

Steps:

  • Preheat oven to 350ºF. Butter a deep baking dish; set aside.
  • Peel and shred apples. In a medium bowl, beat together egg, salt and 1/2 cup sugar. Stir in raisins, shredded apple, rice, 4 Tablespoons of the butter, jam and almonds.
  • Pour into buttered dish; dot with remaining 2 Tablespoons butter. Sprinkle with 1 Tablespoon sugar. Bake 40 minutes; serve hot.

1/2 cup granulated sugar
1 cup cooked short-grain white rice

LAURA'S APPLE MATZOH KUGEL

This only lasted a day in my house! I ate it breakfast, lunch, dinner, and as dessert! THAT'S HOW MUCH I LOVED IT! I re-created the recipe by adding craisins and less sugar. There's enough sweetness from the dried fruit and OJ.

Laura's Apple Matzoh Kugel image

Steps:

  • Preheat the oven to 350°F.
  • Toss the apples with the brown sugar and orange juice, set aside in a medium bowl.
  • Break the matzoh into pieces and soak in 1 cup of warm water until soft but not mushy. Set aside.
  • While the matzoh soaks, beat the eggs with a wire whisk in a large bowl until blended. Add the salt, sugar, cinnamon, melted butter, craisins, and apricots.
  • Squeeze the liquid from the softened matzoh and add the matzoh to the egg mixture with the apples. Stir the kugel well and pour into a lightly greased casserole dish . Dot the top of the kugel with butter chunks.
  • Bake the kugel for 1 hour. (Cover the top with foil if the top begins to becomes too brown early in the baking).

Apple Matzo Kugel image

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease an 8x8 inch baking dish. Break the matzo sheets into pieces, and soak in a bowl of water until soft. Drain in a colander, mashing to squeeze the water out.
  • In a separate bowl, mix together the eggs, salt, sugar, oil and cinnamon. Add the soaked matzo, and mix well. Fold in the apples and raisins. Spoon into the prepared baking dish, and spread evenly.
  • Bake for 45 minutes in the preheated oven, until nicely browned and apples are tender.

Roasted Mango, Pineapple, and Banana With Maple-Ginger Glaze image

Steps:

  • Heat oven to 450 degrees with two racks centered. In a medium bowl, combine the vanilla extract, maple syrup, ginger, and lemon juice.
  • Spray two 12-by-14-inch roasting or jelly-roll pans with cooking spray. Cut one pineapple into 1-inch rounds, and arrange in one roasting pan. Cut second pineapple into 1/2-inch rounds, and arrange in the other pan. Divide mango halves evenly between pans. Brush all fruit lightly with maple glaze. Roast fruit until it starts to brown slightly, 25 to 40 minutes; timing will vary with juiciness of pineapple. Use a spatula to turn fruit over, and brush with glaze again. Cook 10 minutes more. Divide banana pieces evenly between pans, brush with glaze, and cook until golden brown, 15 to 20 minutes.
  • Pour the remaining glaze into a small nonstick skillet. Place the skillet over medium heat, and reduce the liquid until it is thick, 4 to 6 minutes.
  • To serve, arrange 1-inch pieces of pineapple on six plates. Top with half a mango. Arrange 1/2-inch pineapple slices over mango. Arrange banana pieces around edge of plate. Pour a little glaze over each plate.

Steps:

  • Cook rice with the following 3 ingredients.
  • Add the rest of the ingredients to the cooked rice and mix well.
  • Put in well greased cassarole dish.

  • Cook rice according to package directions. Stir 2 tablespoons butter into hot rice. Add applesauce, apples, brown sugar, 1-1/2 teaspoons cinnamon and salt.
