- Rinse and sort beans; soak according to package directions. Drain and rinse beans, discarding liquid., In a 4-qt. slow cooker, combine beans, ham hocks, water, onion, 1 teaspoon garlic powder and 1 teaspoon onion powder. Cook, covered, on low 8-10 hours until beans are tender., Remove ham hocks; cool slightly. Cut meat into small cubes, discarding bones; return meat to slow cooker. Stir in barbecue sauce, brown sugar, nutmeg, cloves, remaining garlic powder, remaining onion powder and, if desired, pepper sauce. Cook, covered, on high about 30 minutes or until heated through.

BARBECUE BEANS FROM THE CROCK POT
Great, hearty tasting dish. Everyone enjoys this recipe. It states to cook for 4-6 hours, but I find that 4 hours is adequate and it may overcook at 6 hours, so be sure and check it at the 4 hour mark. The last hour of cooking you may want to take cover off and turn to high to thicken up a bit if it seems a little thin.

- Whisk the broth, 3 cups water, tomato paste, brown sugar, molasses, mustard, barbecue seasoning and garlic in a slow cooker. Add the beans. Push a clove into each onion half; tuck the onions and sausages into the beans in the slow cooker. Cover and cook on high until the beans are tender, about 6 hours.
- Discard the onion halves. Stir in the vinegar and Worcestershire sauce, then let the mixture sit, uncovered, about 15 minutes. (The longer the beans sit, the more flavorful they will be.) Garnish with pickled peppers, scallions and/or sour cream, if desired.

CROCK POT BARBECUED BEANS
While in Mexico over the winter we really look forward to an occasional meal of 'comfort food', and this is one of our favorites! Recipe comes from Cook's Illustrated. Time indicated does not include time required to soak the beans. This recipe requires a large crock pot (6 qt.) however it can easily be adjusted to fit smaller crock pots (like mine)!

Steps:
- Night before prepare the beans and soak overnight.
- Heat oil in skillet over medium heat until shimmering.
- Add the onions and 1/4 teaspoon salt and saute until opaque.
- Stir in garlic and continue cooking for another 15 seconds.
- Stir in 1 cup of barbecue sauce.
- Bring to a simmer; pour into the slow cooker.
- Drain the beans and add to the slow cooker.
- Add bacon and brown sugar and then the boiling water.
- Cover and cook on low for 9-10 hours, or high for 6-7 hours, until the beans are soft. (Note times will vary with the different brands of crock pots).
- Thirty minutes before serving, stir in the mustard, coffee and remaining 1/4 cup barbecue sauce, and adjust the salt and pepper as needed.
