BARBECUED LIMA BEANS

Steps:
- Place beans in a large saucepan; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 hour. Drain and rinse beans, discarding water. Return beans to the saucepan. Add 6 cups water, onions and salt; mix well. Bring to a boil. Reduce heat; cover and simmer for 1-1/2 to 1-3/4 hours or until beans are tender., Drain and discard liquid. Stir in the ketchup, brown sugar, syrup, hot pepper sauce and bacon. Transfer to an ungreased 2-qt. baking dish or bean pot. Cover and bake at 350° for 30 minutes. Uncover and bake 30 minutes longer or until bubbly.

- In a Dutch oven, bring beans, water and salt to a boil. Remove from the heat; cover and let stand for 1 hour (or soak beans overnight). Do not drain. Bring beans to a boil. Reduce heat; cover and simmer for 45 minutes or until tender. , Meanwhile, shape sausage into 3/4-in. balls; brown in a large skillet or until a thermometer reads 160°. Drain fat. Stir in the tomato juice, chili powder, pepper and basil. , Drain beans; add sausage mixture. Simmer for 10 minutes or until heated through, stirring occasionally.

BARBECUED BEANS WITH SMOKED SAUSAGE
A Southwestern take on one of my hubby's favorite dishes. Usually I make baked beans with miniature smoked sausages, but this time I cut up large smoked sausages and used barbecue sauce and chile peppers. SLOW-COOKER BARBECUE BEANS AND SAUSAGE

- Whisk the broth, 3 cups water, tomato paste, brown sugar, molasses, mustard, barbecue seasoning and garlic in a slow cooker. Add the beans. Push a clove into each onion half; tuck the onions and sausages into the beans in the slow cooker. Cover and cook on high until the beans are tender, about 6 hours.
- Discard the onion halves. Stir in the vinegar and Worcestershire sauce, then let the mixture sit, uncovered, about 15 minutes. (The longer the beans sit, the more flavorful they will be.) Garnish with pickled peppers, scallions and/or sour cream, if desired.

BDUKES LIMA BEANS, CABBAGE AND SMOKED SAUSAGE
I had some left over cabbage and ham hock and threw this together. This is delicious served over cornbread. I was very surprised because it sounded yucky.

- In a large pot, combine the lima beans, ham hocks, water, cabbage and butter. Season with salt, pepper and garlic powder. Bring to a boil, then reduce heat to low and set a lid on top but leave a crack for steam. Simmer for 1 1/2 hours. Remove the lid, add the tomatoes and sausage; simmer with the lid on until beans are completely tender, 15 to 20 minutes.

- 1. 1. In a heavy 9 inch skillet heat oil over medium heat. With fork pierce sausages all over several times. Add sausages and stirring onion occassionally , until lightly browned- about 4 minutes.
- 2. Add lima beans, tomatoes, brown sugar, vinegar, mustard, chili powder, ginger, and salt; cover and heat to boiling. Reduce heat to low and cook stirring occassionally, until limas are tender- 10-12 minutes.
- 3. To serve with tongs, lift sausages and arrange on top of beans. Serve from skillet.
