BACON-Y BOK CHOY
Super easy side dish for those nights you want something different and fast! This can also morph into a main course if served over rice.

Ingredients:
- 4 slices bacon, chopped
- 2 pounds baby bok choy
- 1 teaspoon olive oil
- ½ small red onion, chopped
- 1 teaspoon red pepper flakes
- 1 teaspoon minced garlic
- salt to taste
Steps:
- Fry bacon in a large skillet over medium heat until crispy. Remove bacon and drain the fat, reserving one tablespoon of the grease in the skillet. Add the olive oil, onion, red pepper flakes and garlic. Cook and stir over medium heat until the onions are starting to be tender.
- Add the bok choy, and place a lid on the pan. Let cook for 3 to 5 minutes. Remove the lid; cook and stir until the bok choy is tender but still crunchy, about 2 minutes. Stir in the bacon, and season with salt. Serve piping hot!

Ingredients:
- 2 tablespoons olive oil
- 3 cups chopped bok choy, cut into approx 1 1/2 " pieces
- 1/2 cup sliced onion
- 3 tablespoons sugar
- 3 tablespoons vinegar
- 2 tablespoons Worcestershire sauce
- 1/8 cup chili sauce
- 5 slices bacon, cooked and crumbled
- salt and pepper, to taste
Steps:
- In a large skillet or wok, heat olive oil on med-high heat. Add bok choy and onion and stir-fry until crisp-tender.
- Meanwhile, in a saucepan, combine suagr , vinegar, Worcestershire, chili sauce and cooked crumbled bacon. Simmer for 5 minutes.
- Toss together the bok choy mixture w/ the simmered sauce and serve.

- 2 tablespoons sugar
- 2 tablespoons vinegar, balsamic
- 2 tablespoons Worcestershire sauce
- 1/4 cup chili sauce
- 6 slices bacon, cooked, crumbled
- 2 tablespoons oil, vegetable
- 3 cups bok choy
Steps:
- Fry bacon in a large pan over medium high heat. Remove from pan, crumble and drain grease from pan.
- Combine sugar, vinegar, Worcestershire sauce, chili sauce and bacon in the same pan and simmer for about 5 minutes.
- Heat oil in a wok or large skillet.
- Add bok choy and stir-fry until crisp-tender. (To save calories, you may omit this step and steam the bok choy.).
- Spoon warm sauce over it when ready to serve.

CRUNCHY BOK CHOY SLAW
I found this recipe on Yahoo.com while searching for recipes using bok choy as an ingredient. I haven't made this yet, but it sounds delish and easy to prepare. If you try it before I do, please share your thoughts in the review process.

Ingredients:
- 1/4 cup rice vinegar
- 1 tablespoon toasted sesame oil
- 2 teaspoons sugar
- 2 teaspoons Dijon mustard
- 1/4 teaspoon salt
- 6 cups bok choy, very thinly sliced
- 2 medium carrots, peeled and shredded
- 2 scallions, thinly sliced
Steps:
- Whisk vinegar, oil, sugar, mustard and salt in a large bowl until the sugar dissolves. Add bok choy, carrots and scallions.
- Toss to coat with the dressing.

- Cook your bacon and set it aside. Heat 2 tbs vegetable oil in a skillet over medium high heat on the stove top. While that is heating prepare your Bok Choy (I like simply cutting it in half after washing it well - but you may want to peel the individual leaves off and cook them that way - either way is fine). As the oil heats, add the garlic and fresh ginger to the pan and allow it to cook for about a minute and then add the bok choy. Cook the bok choy for about 1-2 minutes per side until it starts to wilt. Add the red peppers (I used chipotle pepper, but red peppers is fine). Stir a couple more times and remove from the heat.
- Plate the bok choy and dress with the soy sauce and sesame oil. Sprinkle the cooked garlic pieces over the top. Crumble the bacon you cooked earlier and sprinkle over the top.

- Combine the soy sauce, Sriracha and sugar in a bowl; set aside. Meanwhile, heat 1 tablespoon vegetable oil in a large nonstick skillet over high heat. Add the Canadian bacon; cook, stirring, until crisp and browned around the edges, about 4 minutes. Transfer to a bowl.
