Steps:
- Preheat oven to 325°F (190°C).
- Cut the chicken into strips.
- In one medium-sized bowl, mix the bread crumbs, parmesan, salt, and pepper.
- In another bowl, crack the eggs and whisk until scrambled.
- Coat the chicken in the egg, then in the bread crumbs, then repeat.
- Place the chicken tenders on a baking tray and bake for 20 minutes, flipping halfway through.
- Sprinkle each tender with mozzarella and bake again for 5 more minutes, or until cheese is melted.
- Serve with marinara.

Steps:
- Cut the chicken tenders into 1.5-inch (4 cm) pieces.
- Take a knife and carefully cut a hole into the chicken tenders. Make sure to not cut all the way to the other side.
- Stuff the holes with mozzarella cheese.
- Add garlic powder, dried basil, dried parsley, and salt to the panko bread crumbs.
- Batter the chicken in flour, egg, then panko bread crumb mixture.
- Add around 1-inch (2 cm) of oil to a pan and heat until around 350˚F (175˚C).
- Fry the chicken on both sides until fully cooked and golden brown.
- Serve with marinara sauce and garnish with more parmesan cheese.

- Preheat an air fryer to 400 degrees F (200 degrees C) for 5 minutes.
- Combine egg, whipping cream, and 1/2 of the salt in a bowl. Whisk until yellow and frothy.
- Mix panko, herbs. and remaining salt together in a separate shallow bowl until well combined.
- Dip chicken pieces first into egg mixture, followed by panko, and set in the air fryer basket.
- Air-fry for 13 minutes, shaking the basket every 5 minutes. Spray with cooking spray and sprinkle with Parmesan cheese. Air-fry until chicken is no longer pink in the center and the juices run clear and Parmesan is melted, about 2 more minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

- Arrange 3 shallow bowls on the counter; fill one with the flour, one with the eggs, and one with a mixture of the bread crumbs, cheese, garlic, lemon zest, and parsley.
- Season the chicken pieces with salt and pepper; coat each first in the flour, then in the egg, and finally in the bread crumb mixture; set the coated pieces on a baking sheet.
- Place a large pan over medium heat with the olive oil.
- Cook the chicken in 2 batches, turning once, until golden brown and cooked through, 5-6 minutes.
- While the chicken bites are cooking, place a small pot over medium heat with the crushed tomatoes and bring up to a bubble.
- Remove the pot from the heat and stir in the pesto.
