GRILLED FLANK STEAK, PORTOBELLO AND GREEN BEAN SALAD

- Make marinade:
- Combine 2 tablespoons olive oil, 3 tablespoons balsamic vinegar, orange juice, 2 teaspoons minced garlic, chili flakes, and 1/4 teaspoon each salt and pepper in a bowl and whisk. Place steak and mushrooms in a glass baking dish or sealable plastic bag and pour marinade on top. Marinate in the refrigerator for at least 1 or up to 4 hours.
- Make dressing:
- Combine remaining 2 tablespoons olive oil, 3 tablespoons vinegar, 1 teaspoon minced garlic, water, mustard, and remaining 1/4 teaspoon each salt and pepper. Whisk until incorporated.
- Place green beans in a steamer basket over a few inches of boiling water and steam until tender-crisp, about 3 minutes. Allow to cool in the refrigerator, or to cool quickly, drain and plunge in a bowl of ice water for 2 minutes. Drain and reserve.
- Spray a grill or grill pan with nonstick cooking spray and heat over medium-high heat. Remove steak and mushrooms from marinade, and discard marinade. Grill steak until medium-rare and mushrooms until cooked through but still juicy, about 4 to 5 minutes per side for both steak and mushrooms. Remove to a cutting board and let rest about 10 minutes. Cut steak across the grain into 1/4-inch slices; cut mushrooms into 1/4-inch slices.
- To assemble salad, toss steak slices, mushroom slices, spinach leaves, tomatoes, green beans and onions with dressing. Divide among 4 plates.

These juicy portobello steaks are one of my favorite quick and easy dishes. These can be cooked on a skillet indoors or on a grill outdoor. Such a great plant-based alternative whether you are vegan or just looking for a meatless Monday recipe!

- Remove stems and clean the mushrooms; set aside.
- Mix vinegar, Worcestershire, oil, garlic, onion powder, salt, and pepper together in a small bowl.
- Place mushrooms inside a large zip-top bag. Pour in the marinade and turn the bag so the mushrooms get evenly coated. Let sit in a refrigerator for a minimum of 5 minutes, or up to 12 hours.
- Spray a large skillet with cooking spray and heat over high heat. Grill mushrooms in the hot pan until heated through and browned, about 4 minutes per side.

GRILLED PORTOBELLO MUSHROOMS STACKED WITH FRESH SPINACH AND SHAVED MANCHEGO CHEESE

- Heat grill to high. Brush mushroom caps on both sides with oil and season with salt and pepper. Grill, cap side down, until slightly charred, about 4 to 5 minutes. Turn the mushrooms over and continue grilling until just cooked through, about 3 to 4 minutes longer.
- Stack the ingredients on each of 4 salad plates starting with a mushroom cap, a slice of cheese, some spinach, and a drizzle of Sherry Vinaigrette. Add another mushroom cap, more vinaigrette, spinach, and another slice of cheese. Place a third mushroom cap on top and finish by drizzling with additional vinaigrette and garnishing with chopped chives, if desired.
- 1 small shallot, finely chopped
- 1/4 cup sherry vinegar or balsamic vinegar
- 2 teaspoons Dijon mustard
- 1/4 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper

GRILLED FLANK STEAK WITH SAUTEED PORTABELLA AND CREMINI MUSHROOMS

- Pat steak dry and cut crosswise at a 45° angle into 4 equal pieces. Season steaks with salt and pepper and transfer to a large resealable heavy-duty plastic bag. Chop shallots and in a bowl stir together with vinegar, sugar, and soy sauce. Pour marinade into bag. Marinate steaks, covered and chilled, turning bag over at least once, at least 2 hours and up to 2 days.
- Prepare grill.
- Remove steaks from bag and discard marinade. Grill steaks on a lightly oiled rack set 5 to 6 inches over glowing coals 7 to 9 minutes on each side for medium-rare. (Alternatively, grill steaks in 2 batches in a hot lightly oiled well-seasoned ridged grill pan over moderately high heat.) Transfer steaks as cooked to a cutting board and let stand 10 minutes.
- Cut steak at a 45° angle across grain into thin slices. Serve steak with sautéed mushrooms.
PORTOBELLO MUSHROOMS GRILLED LIKE A STEAK

- Heat the grill pan. While waiting for the grill to be ready, make the sauce. Heat 1 tablespoon of the olive oil in a medium saucepan over medium-high heat until hot. Add the shallot and cook briefly until soft and light brown. Add 1 teaspoon of the thyme and stir, then add the red wine. Bring to a boil and cook until reduced to about 1/4-cup. Add the broth, return to a boil and continue to cook until reduced to about 3/4-cup. Season with salt and pepper.
- Measure 2 tablespoons sauce into a medium bowl and whisk in the red wine vinegar. While whisking rapidly, drizzle in 1 tablespoon of the olive oil. Season with salt and pepper. Set the vinaigrette aside until ready to assemble the dish. Whisk the butter into the remaining sauce, season with salt and pepper to taste and keep warm.
- In a medium bowl, whisk together the remaining 1/2-cup olive oil, the balsamic vinegar, the garlic and the remaining thyme. Holding the mushrooms one at a time over the bowl, spoon the marinade over them and let the excess run back into the bowl. Repeat until the mushrooms have been well coated all over Lay the mushrooms on a plate and season both sides with salt and pepper
- Brush or wipe a little olive oil on the grill. Place the mushrooms, gill side down, on the grill and cook, turning once, until browned on both sides and cooked through (about 4 minutes total). Remove and keep warm. Add the spinach to the vinaigrette and toss well. Divide among 4 plates. Top with the mushrooms, gill side up, and spoon the sauce onto the mushrooms.
GRILLED PORTOBELLOS SAUTEED IN WINE
This recipe is a great addition to beef roast or a grilled steak. It is easy, quick, and can be prepared in the time it takes the steak to be grilled, if need be. We were absolutely amazed when this recipe became a favorite of our 2 year old grand daughter!

- Preheat grill for high heat.
- Place mushrooms onto the grill, smooth side up. Grill until they start to soften, about 10 minutes. Turn over, and grill on the other side for about 5 minutes.
- Meanwhile, heat olive oil and butter in a large skillet over medium heat. Add the shallot, and fry for a few minutes, stirring frequently.
- Remove mushrooms to a cutting board, and slice. Place into the skillet, and increase the heat to high. Cook for about a minute, then pour in the wine. Continue to cook and stir until the wine is nearly evaporated. Remove from heat, and serve.

GRILLED STEAK SANDWICH WITH PORTOBELLOS, GRILLED ONIONS, AND FONTINA
The key to success with this sandwich is knowing which way to slice the flank steak: against the grain of the muscle fibers. Hey, Philly never had it so good.

- Preheat the oven to 350°F. Roasting garlic and shallots brings out their incredible sweetness and only adds one quick cooking step. Peel off the outer layer of the garlic and shallot skins. Smash them open with the flat side of a knife to break up the cloves. Rip off a large piece of heavy-duty aluminum foil and put the garlic and shallots in the center. Toss in the rosemary and bay leaf and moisten with 2 tablespoons of the oil and 1 tablespoon of water. Wrap up the aluminum pouch, making sure it is sealed tightly so none of the liquid seeps out. Put the pouch in the oven for 20 minutes to steam and soften the garlic and shallots. Unwrap the aluminum and carefully pour any juices into a food processor. Peel the garlic cloves and shallots and toss them into the food processor along with the remaining 1 cup of oil. Season with salt and pepper and pulse until the mixture is well blended. Lay the steak in a shallow platter and pour the flavored oil on top. Cover and refrigerate for at least 2 hours or up to overnight, turning the steak over occasionally so both sides feel the love of the oil.
- To make the arugula mayonnaise, combine the mayo, lemon juice, horseradish, and arugula in a food processor. Turn the machine on for 1 minute to combine all the ingredients; the mayo will have a bright green color. Season with salt and pepper, cover, and pop it in the refrigerator.
- Lay the mushrooms and onion slices in a shallow platter, drizzle with the vinegar and oil, and season with salt and pepper. Try not to break up the onion slices into rings, they are easier to grill as slices. Take the steak, mushrooms, and onions outside because we're about to make some magic.
- Preheat your grill until it's very hot. Take a few paper towels and fold them several times to make a thick square. Blot a small amount of oil on the paper towel and then carefully and quickly wipe the hot grates of the grill. This will create a nonstick grilling surface. Grill the steak for 7 minutes per side for medium-rare. Remove the steak to a cutting board and let it rest for 10 minutes. While the steak rests, grill the mushrooms and onions for about 5 minutes per side so they have a nice char. Brush the cut sides of the ciabatta bread with a little bit of oil and grill for a minute to toast. Slice the mushrooms, separate the onion slices into rings, and slice the steak, paper-thin, against the grain.
- Now you are ready to put this awesome sandwich together. To assemble, spread both sides of the bread with the arugula mayonnaise. Lay several slices of flank steak on the bottom bread half and mound with mushrooms and onions. Cover with a couple of slices of fontina cheese and cap it all with the top half of bread. Slice the loaf into 4 sandwiches. Garnish with arugula and serve. It's a beautiful thing.

- Start by prepping the steak and the mushrooms for the grill. Brush the steaks with olive oil and season with salt and pepper.
