GRILLED TURKEY BURGERS WTIH MONTEREY JACK, POBLANO PICKLE RELISH
This recipe is from Grilling for Life cookbook by Bobby Flay. Turkey burgers have become the alternative to hamburgers. Ground turkey is a great choice because of its low fat content, but that often means the burgers are dry and bland. Not these! The slightly spicy pickle relish and the cooling avocado mayonnaise infuse the burgers with flavor through and through.

- Poblano Pickle Relish: Combine all of the ingredients for the relish in a medium bowl. Cover and let sit at room temperature for at least 30 minutes and up to 4 hours before serving.
- Avocado Mayonnaise: Place all of the ingredients for the mayonnaise in a food processor and process until smooth.
- Turkey Burgers: Heat your grill to high. Shape the ground turkey with your hands into 4 round patties about 1 1/2 inches thick. Brush each burger on both sides with the oil and season with the salt and pepper. Grill until slightly charred on both sides and cooked completely through, about 4 minutes per side. Place a slice of cheese on each burger, close the lid of the grill, and cook for 1 minute longer to melt the cheese. Transfer to a plate and let rest for 5 minutes.
- Top each burger with 1 tablespoon of the avocado mayonnaise and a few tablespoons of the relish. Serve the remaining avocado mayonnaise on the side if desired.
- Note: Bobby Flay cooks peppers and chiles right on the grill. Heat the grill to high. Brush peppers with olive oil and season with salt and pepper. Grill until charred on all sides, 8 to 10 minutes. Place the peppers in a bowl, cover with plastic wrap and let sit for 15 minutes. Then peel, halve, stem and seed them.

- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Combine turkey, red onion, sour cream, mustard, and steak seasoning in a bowl until well mixed. Form into four 3/4-inch thick patties. Drizzle with olive oil on both sides and season with salt.
- Cook on the preheated grill until cooked through, about 5 minutes per side, laying Swiss cheese over burgers just before removing from the grill. An instant-read thermometer inserted into the center of the burgers should read at least 165 degrees F (74 degrees C).

- Spray "grill cooking spray," such as Pam, on the grill grate while it is unheated. Then prepare the outdoor grill for covered direct grilling on medium.
- In a medium bowl, combine zucchini, onion, and Cajun seasoning until well-mixed. With hands, add ground turkey and mix until just blended. Shape into four 3/4-inch-thick burgers, handling meat as little as possible for best texture.
- Place burgers on hot grill grate and cook 12-14 minutes or just until no longer pink throughout, turning once.
- Prepare sauce: In small bowl, combine ketchup and hot sauce; set aside.
- Serve burgers on buns with lettuce, tomato and condiments of your choice.

I love to serve these burgers up on a hot day! I enjoy turkey burgers much more than beef burgers. :-) For a jucier burger, try not to use the leanest ground turkey. The leaner the turkey, the drier your burgers will be.

- First you will want to heat your grill to HIGH.
- In a bowl, combine your turkey with grated cheese with a fork.
- Then add the scallions, breadcrumbs, garlic, and mustard.
- Season with salt and pepper.
- Then gently form turkey mixture into four patties, approximately 1 inch thick.
- If you have trouble forming patties, you may need to add more breadcrumbs; it really depends on the amount of moisture that your meat contains.
- Lightly oil your grill and place patties on the hottest point of your grill, and sear them until they are browned*this will take approximately 1-2 minutes on each side* Move the patties to a"cooler" part of the grill, and continue grilling until they are cooked through, aproximately 5-10 minutes on each side.

GRILLED TURKEY BURGERS
There are a couple steps to ensure a crisp on the outside, juicy on the inside and all around delicious grilled turkey burger. Grated onion and barbecue sauce give the patties savoriness and provide additional moisture, so they don't dry out from the high heat of the grill. Coating the patties in a mixture of barbecue sauce and mayonnaise guarantees a seared and glazed exterior. If you'd like to turn these into cheeseburgers, simply drape sliced cheese - preferably Cheddar or pepper Jack - over the patties in the last two minutes of grilling and cover the grill.

- Heat the grill to medium-high. Lightly grease a plate and set aside. Coarsely grate 1/4 cup onion; reserve the remaining onion. In a medium bowl, mix the turkey, grated onion and 2 tablespoons barbecue sauce. Form 4 patties about 4 ½ inches wide (about 5 ounces each). Press a small dimple in the center of each patty, then place the burgers on the plate and refrigerate until firm (at least 5 minutes or, covered, up to 2 days).
- Meanwhile, in a small bowl, stir together the remaining 2 tablespoons barbecue sauce with the mayonnaise; season with 1 teaspoon each of salt and pepper.
- When ready to grill, dip the reserved onion in oil. Clean the grates with a grill brush, then grease the grates with the oiled onion. (This perfumes the grill and your patties.) Lightly coat the tops of the burgers with some of the mayo mixture (about 1/2 teaspoon per patty).
- Grill the burgers, mayo side down, until well browned and patties release from the grates, 4 to 6 minutes. (If flare-ups occur, move to an area of the grill where there are no flames underneath. For a gas grill, close the lid between flips, listening and keeping an eye out for flare-ups.) Spread mayo mixture on the tops of the patties, then flip and grill on the second side until cooked through, another 4 to 6 minutes.
- Transfer to a plate and let rest for at least 5 minutes. Grill the cut sides of the buns until toasted, 1 to 2 minutes. Build burgers on the buns with the patties and desired toppings and condiments.
