GUMBO BASE (AKA ROUX)
A roux is the base of numerous Cajun and creole dishes. In Louisiana, natives have a joke about how long it takes to make the roux for certain dishes. Etouffee is usually a 1 beer roux while a full fledged gumbo is a 2 to 3 beer roux. Obviously meaning how long it takes to DRINK the beer. The cook time will vary depending on how dark you want your gravy. NOTE: The measurements I used are normally what I make for a Sunday pot of gumbo, southern style. That means it makes a lot! You may want to only use half for normal people!

Steps:
- Melt Butter in a heavy bottomed skillet over medium to medium high heat.
- Slowly sprinkle in the flour a little at a time, stirring constantly.
- Continue to stir constantly.
- Do not walk away!
- If you burn it even the tiniest bit, it is unusable.
- You will notice the flour beginning to brown.
- The darker the flour, the darker the gravy.
- For gumbo, when the roux reaches a deep dark chocolate brown color it is done.
- At that point you would add your seasonings, such as onion, garlic, bell pepper and celery.
- You can make this ahead of time and keep tightly covered in the frige or freezer.
PAUL PRUDHOMME'S CAJUN SEAFOOD GUMBO WITH ANDOUILLE

- Combine onions, bell peppers, and celery in a medium-size bowl and set aside. In a small bowl combine next 7 ingredients for seasoning; mix well and set aside.
- Heat the oil in a large skillet over high heat until it starts to smoke, about 5 minutes.
- Gradually add the flour, whisking constantly with a metal whisk. Continue cooking and whisking until roux is dark red-brown to black, 2-4 minutes.
- Immediately add half the vegetable mirepoix and stir well, switching to a spoon if necessary, 1 minute.
- Add the remaining vegetables, continuing to stir, about 2 minutes. Add the seasoning mix and continue to cook, about 2 minutes.
- Add garlic, stirring well for another minute. Remove from heat.
- Place the stock in a 5 1/2-qt saucepan or Dutch oven and bring to boil. Add roux mixture by spoonfuls, stirring until dissolved in between each addition. Bring back to boil.
- Add andouille and return to boil again; continue boiling for 15 minutes, stirring occasionally. Reduce heat and simmer 10 minutes.
- Add the shrimp, undrained oysters, and crab meat. Return to boil, stirring occasionally.
- Remove from heat, skim oil from surface, and serve over rice.
ROUXLESS GUMBO
Gumbo has a history of being made with roux, but my Mom's recipe didn't have it. Now it is my most requested item at work, tailgating parties, and at home. The vegetables really shine in this gumbo!

Steps:
- Place chicken in a large pot; add enough water to cover. Cover pot and bring to a boil; reduce heat to medium-low and simmer until meat falls off the bone, about 90 minutes. Remove chicken, let cool, and shred meat; skim broth and reserve.
- Melt butter in a large skillet over medium heat; cook and stir onions, bell pepper, and celery until tender, about 5 minutes. Stir in garlic and cook until fragrant, about 1 minute. Add diced tomatoes, tomatoes with green chilies, andouille sausage, okra, corn, salt, pepper, cayenne pepper, and reserved broth; bring to a gentle boil over medium-high heat. Simmer until liquid is reduced by half, about 30 minutes.
- Mix shredded chicken and shrimp into skillet; simmer until shrimp turns bright pink and okra is tender, 5 to 7 minutes. Remove skillet from heat and stir in file powder. Serve with rice.

LOUISIANA GUMBO ROUX
Gumbo roux recipe shared with me years ago by a cajun coworker. He didn't give me the measurements on the flour or oil & I haven't made this in years so you might have to tweak the recipe a bit. I thought I had lost the recipe and was very excited to find it today! :)

- Mix all purpose flour and cooking oil to a peanut butter consistency.
- Spread about 3/4" thick in a baking dish.
- Bake at 350 until dark brown. (Be careful not to burn it! If you do, throw it out. It will be bitter).
- When done, add roux to 3 quarts boiling water. (Approx. 2 tablespoons roux to 1 quart of water).
- Add all remaining ingredients and your roux is complete!
- Double or triple the recipe if desired. Roux can be stored in an airtight container in the refrigerator or freezer for weeks.

ROUX-BASED AUTHENTIC SEAFOOD GUMBO WITH OKRA

- Put flour into a Dutch oven or large heavy pot and add flour. Turn heat to medium-high, put the pot on the burner, and cook, stirring constantly with a wooden spoon, until thick and bubbly, has a 'peanutty' smell, and is dark brown, about 10 minutes. Set aside to cool and thicken.
- Melt butter in a skillet over medium heat. Cook and stir celery, green onions, and bell pepper in hot butter until tender, about 10 minutes; add to pot with the roux.
- Stir water, tomato sauce, Worcestershire sauce, garlic, 2 teaspoons salt, hot pepper sauce, and thyme into the vegetable mixture. Bring the mixture to a gentle boil, reduce heat to medium-low, and simmer for 1 hour.
- Stir okra into the vegetable mixture and cook until tender, about 15 minutes. Add catfish, stir gently, and cook until the flesh is easily flaked with a fork, about 5 minutes. Gently stir shrimp into the mixture; cook until the shrimp are bright pink, about 3 minutes. Season with the file powder and salt; stir.

- Make the Roux*: In a large, heavy bottom stock pot combine flour and oil. Cook on medium-low heat, stirring constantly for 30-45 minutes. This part takes patience--when it's finished it should be as dark as chocolate and have a soft, "cookie dough" like consistency. Be careful not to let it burn! Feel free to add a little more flour or oil as needed to reach this consistency.
- Brown the sausage. In a separate skillet on medium-high heat place the sausage slices in one layer in the pan. Brown them well on one side (2-3 minutes) and then use a fork to flip each over onto the other side to brown. Remove to a plate.

- Choose a heavy bottomed iron skillet/pan/pot for best results. Set the skillet over medium heat. When moderately hot add oil and the add the white flour. Stir with a help of a spatula until the flour is well blended into the oil. Immediately reduce the heat to the lowest setting or if you are a pro cook you may even keep it at medium low.
- Stir frequently until the flour changes it's color and becomes dark brown or looks like a melted chocolate. It should take you approximately 35 minutes for this quantity of roux. You'll notice that the flour will gradually change its color from white - blonde - peanut butter - brown and than dark brown.
- Turn off the heat immediately and proceed with the Gumbo recipe. Or else if you decide to store your Gumbo Roux for later use allow it to cool down completely than store it in the fridge for 3 months or freeze it in ice cube tray and freeze them for 6 months.
