Ham Baked With a Georgia Peach Glaze image

Steps:

  • Remove skin and excess fat from ham. Score fat on ham in a diamond pattern.
  • Place the ham, fat side up, in a roasting pan (line with heavy duty aluminum foil for easy cleanup).
  • Stir together remaining ingredients. Pour mixture evenly over ham.
  • Bake at 325 for 30 minutes. Baste and then shield with foil after 30 minutes to prevent excess browning.
  • Continue baking for 1 hour or until a meat thermometer inserted in ham registers 140 degrees, basting every 30 minutes. Let stand 10 minutes before serving.

Steps:

  • Preheat oven to 350 degrees F.
  • In a medium saucepan, simmer together peach nectar, ginger, lemon juice, and garlic cloves. Simmer for 20 minutes.
  • Strain out ginger and garlic.
  • Prepare ham for glaze. Rub Dijon mustard and then brown sugar on the ham.
  • Pour glaze on bottom of pan and throw in sliced peaches for additional peach flavor.
  • Place ham in oven for 1 1/2 hours. Every 10 to 20 minutes glaze ham with the glaze from bottom of pan to keep moist.

1 (1-inch) piece ginger, smashed
1/2 lemon, juiced
4 cloves garlic, smashed
1/4 cup Dijon mustard
1 cup brown sugar
1 (14-pound) precooked ham
3 whole peaches

  • In a large skillet over medium high heat, melt the butter. When the foaming subsides, add the julienned carrots, turnips and parsnips and saute for 2 minutes. Add 1/4 cup water, cover and simmer just for 3 minutes or until the vegetables are just tender. Season to taste with salt and pepper.
