KASHA (BUCKWHEAT GROATS) BREAKFAST CEREAL
I got this off the back of a box of Wolff's medium granulation kasha. I don't know if it would work with other granulations, as I haven't tried it! I'm not sure why it says to serve with milk -- I just treated it as if it were microwaved instant oatmeal, and added a couple of packets of Splenda at the end. Edited to add that the nutrition facts are obviously incorrect -- two tablespoons of dried kasha are 85 calories, so if you use water, that should be the calorie count.

Steps:
- Stir 2 T kasha and a dash of salt into 2/3 cup water or milk in a 2- to 3-cup bowl. Microwave, uncovered, on MEDIUM, 5 to 8 minutes, stirring occasionally until slightly thinner than desired consistency. Let stand 1 to 2 minutes. Serve with milk and favorite sweetener.
KASHA WITH VEGETABLES
Kasha boasts a wonderfully nutty flavor when toasted. You can buy it already toasted. If you buy the untoasted variety, toss it lightly in a dry skillet over medium heat until it colors. Hearty, but not too heavy, kasha is a staple of Northern Europe and Russia traditionally served as an accompaniment to meats, in pilafs or as the essential ingredient in many traditional Jewish dishes like kasha varnishkes. Exotic though it may sound, kasha is just basic buckwheat groats, used like a grain, but botanically just a cousin of true grains. Once only available through specialty grocers, you'll find kasha in many health food stores and supermarkets now as well. So, by all means, go nuts with kasha!

Steps:
- Soak the dried mushrooms (shiitake or porcini are very flavorful) in water until soft.
- Drain, saving the soaking water, and slice, discarding any tough portions.
- Add the groats to 3 cups boiling water (including the mushroom-soaking liquid), lower heat, and add the carrot, the onion and the mushrooms.
- Cover and simmer until water is absorbed.
- Add salt or natural soy sauce to taste.
KASHI FRIENDLY FIBER MUFFINS
I got this recipe at my weight loss meeting this week. Start the day off right with these moist, fat free, cholestrol free, high fiber muffins. These are 1 1/2 points per muffin.

- Spray muffin tin cups with cooking spray and preheat oven to 400 degrees.
- In a small bowl, stir together flour, baking powder and salt.
- Set aside.
- In a large mixing bowl, combine cereal and milk and let stand for 2-3 minutes.
- Add the honey and egg whites and beat well.
- Stir in apple sauce and banana.
- Add flour mixture and mix only until dry ingredients are moistened, over mixing will produce rubbery muffins.
- Fill sprayed muffin tins.
- Bake for 20-25 minutes or until lightly browned.

On a cold winter day, there is nothing better than a bowl of hot cereal to keep you warm. I love to make this cereal because its quick, tastes great, and will keep in the fridge for up to 4 days.

Steps:
- In a saucepan, combine water, apple concentrate, milk, and egg. Beat until combined.
- Add the kasha, salt, brown sugar, cinnamon, nutmeg, raisins, and chopped dried apples.
- Bring to a boil, and hold their for ten minutes. Stir constantly to keep kasha from sticking to the bottom of the pan. The cereal will have the consistency of oatmeal when it's done.
- If you prefer to use a fresh apple, then use only 1/2 cup apple concentrate.
- If you don't like apples, then replace the dried apples with raisins or dates, and the apple concentrate with 1/2 cup milk.
- If the cereal is to sweet, then cut the brown sugar measurement in half.
