Steps:

  • In a large saucepan, cook beef, green pepper and onion over medium heat 6-8 minutes or until meat is no longer pink, breaking up beef into crumbles. Add garlic; cook 1 minute longer. Drain., Stir in tomatoes, broth, tomato sauce, corn, tomato paste, Italian seasoning and pepper. Bring to a boil. Stir in pasta. Return to a boil. Reduce heat; simmer, covered, 10-12 minutes or until pasta is tender. Sprinkle with cheese.

1 cup frozen corn
1/4 cup tomato paste
2 teaspoons Italian seasoning

2-1/2 cups uncooked spiral pasta

I got this recipe from a Taste Of Home cooking school/show that my friends and I attended in the fall of 2001. I have not fixed it, but it keeps resurfacing at the top of my "need to try" pile, so I am posting it here for safekeeping. Let me know what you think if you try it before me!

Steps:

  • In a large skillet, cooke beef with garlic powder until browned; drain.
  • Add broth, tomatoes and Italian seasoning.
  • Bring to a boil.
  • Stir in pasta.
  • Cook over medium heat for 10 minutes or until pasta is tender.
  • Stir in 1/4 cup of parmesan cheese.
  • Serve with additional cheese if desired.

Steps:

  • Heat the olive oil in a large pot or Dutch oven over medium-high heat. Once the oil begins to shimmer, add the onion and cook until softened and golden brown, about 7 minutes. Add the garlic and cook, stirring constantly, until aromatic, about 1 minute.
  • Add the ground beef and cook, breaking up the meat with a wooden spoon, until browned and cooked through, about 5 minutes. Add the tomato paste and cook, stirring constantly, until combined, about 1 minute.
  • Add the salt, pepper, oregano, thyme, rosemary, crushed tomatoes, and chicken stock and bring to a low boil, stirring to combine.
  • Add the lasagna noodles and cook until al dente according to package instructions.
  • Ladle the lasagna soup into bowls and top with a dollop of ricotta.
  • Enjoy!

Steps:

  • In a large skillet, cook beef, onion and garlic in oil until meat is browned and onion is tender; drain. Stir in tomatoes, tomato sauce, tomato paste, oregano, sugar, salt and pepper. Place carrots and celery in sauce. Simmer, uncovered, for 1-1/2 hours, stirring occasionally. , Meanwhile, cook lasagna noodles according to package directions. Drain; rinse in cold water. Remove and discard carrots and celery. , In a greased 13x9-in. baking dish, layer one-third of the noodles, one-third of the meat sauce, one-third of the ricotta, one-third of the mozzarella and one-third of the Parmesan. Repeat layers once. Top with remaining noodles and meat sauce. , Cut a heart out of aluminum foil and center on top of sauce. Dollop and spread remaining ricotta around heart. Sprinkle with remaining mozzarella and Parmesan. Bake, uncovered, at 350° for 45 minutes. Remove and discard foil heart. Let stand 10-15 minutes before cutting.
