HERBED CHICKEN STIR-FRY
Fresh zucchini and squash really brighten this chicken and rice dish. Garlic and oregano combined with lemon juice add extra hits of flavor the whole family will like.

- In a small saucepan, bring 2 cups broth to a boil. Stir in rice. Remove from the heat; cover and let stand for 5 minutes. Meanwhile, in a small bowl, combine cornstarch and remaining broth until smooth; set aside., In a large skillet or wok, stir-fry the chicken, yellow squash, zucchini, onion in herb butter for 5 minutes or until chicken is no longer pink. Add garlic; cook 1 minute longer. , Stir in the lemon juice, oregano, salt and pepper. Stir cornstarch mixture and add to pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with rice.

CHICKEN STIR-FRY
Steps:
- Heat 1 tablespoon oil in a saute pan over medium heat. Add garlic and stir. Place the chicken in the pan and brown 4 minutes on each side. Remove from pan, slice into strips, set aside.
- Heat remaining tablespoon of oil in a wok over high heat. Add the vegetables and teriyaki sauce. Stir-fry quickly until the vegetables begin to soften. Add the chicken strips, combine well and continue to cook for 2 to 3 minutes. Serve immediately.

Steps:
- Mix the water, oil and soup mix in a gallon zip seal bag. Mix well (should look like salad dressing). Reserve 1/4-1/2 cup of liquid. Add chicken breasts to bag and marinate over night in fridge. (If you need to do it quick, fork prick all of the breasts and marniate for a 1/2 hour.)
- Saute breasts in olive oil about 3-5 minutes each side until brown. Cut into 1 inch pieces and set aside in a covered dish.
- Saute potatoes, sliced zucchini and onion until onion is translucent. Add reserved liquid and simmer covered until potatoes are done. (you will need to add more water, but it isn't necessary to completely cover the potatoes about half way is sufficient).
- Add Chicken pieces and reduce liquid to as thick of a sauce as you desire (I usually reduced by about 1/2).
