HOMEMADE PIZZA SAUCE
For years, I had trouble finding a pizza sauce recipe my family liked, so I started making my own. The evening I served it to company and they asked for my recipe, I knew I'd finally got it right! - In a large saucepan over medium heat, combine tomato sauce and paste. Add remaining ingredients; mix well. Bring to a boil, stirring constantly. Reduce heat; cover and simmer for 1 hour, stirring occasionally. Cool. , Pour into jars or freezer containers, leaving 1/2-in. headspace. Freeze up to 12 months. Thaw frozen sauce in refrigerator before serving.

- Preheat oven to 375°. In a large bowl, dissolve yeast in warm water. Add the oil, salt, sugar and 2 cups flour. Beat on medium speed for 3 minutes. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rest in a warm place for 10 minutes. , Meanwhile, combine sauce ingredients; set aside. Divide dough in half. On a floured surface, roll each portion into a 13-in. circle. Transfer to greased 12-in. pizza pans; build up edges slightly. Prick dough thoroughly with a fork. , Bake until lightly browned, 12-15 minutes. Spread sauce over hot crusts to within 2-in. of edges; top with sausage, mushrooms, green pepper and cheese. Bake 20 minutes longer or until cheese is melted.

Our rich tomato pizza sauce is achieved by cooking it over a low heat until thickened and glossy. It's easy to make and is perfect for pizza night.

- Heat the oil in a saucepan over a low heat, then add the onion along with a generous pinch of salt. Fry gently for 12-15 mins or until the onion has softened and is turning translucent. Add the garlic and fry for a further min. Tip in the tomatoes and purée along with the bay, oregano and sugar. Bring to the boil and lower the heat. Simmer, uncovered, for 30-35 mins or until thickened and reduced. Season. For a really smooth sauce, blitz with a stick blender, otherwise leave as is.
- Stir the basil into the sauce. The sauce will cover 4-6 large pizza bases. Keeps well in the fridge for 1 week or stored in a container in the freezer.

- Heat olive oil over medium-low heat in a saucepan; stir anchovy fillets into olive oil and cook, stirring often, until the fillets begin to sizzle, about 1 minute. Mix garlic into oil and cook just until fragrant, 1 minute more. Add fresh oregano and reduce heat to low; cook until oregano is wilted, 2 or 3 more minutes.

- Heat your oil in an 8 quart pan. Add your onions-we want to sweat them until they are transparent. This should take about six minutes. Then, add your garlic. By now, your kitchen should be filling with a delectable aroma-excellent!
- At this point, we want to add the tomato puree we made, along with the sugar, salt, and red pepper. Bring the whole mixture to a boil. Then reduce heat and simmer, stirring occasionally, as the sauce thickens. The sauce should be pretty smooth when we finished, provided we did okay during the food-processing.
- Voila! You've made all-natural, excellent pizza sauce from all whole ingredients. This pizza sauce recipe can be canned or frozen, so if you have left overs after you prepare your pizza, go ahead and save some for next time.
- Please note: This can be canned or frozen. One pint is good for 2 -12 inch pizza's.
