Steps:

  • Cut Manchego into 1 1/2 inch cubes. Place cubes into flour, egg, then Panko crumbs. Preheat a deep-fat fryer to 190C/375F or (If you haven't got a deep fryer, fill a large saucepan one third with vegetable oil and heat.) Coat the cheese cubes in the flour, then egg, then Panko crumbs, then deep-fry until crisp and golden. Drizzle honey over and dust with the paprika.

1/2 pound Manchego cheese, cut in 1 1/2 inch cubes
1 cup flour
1 egg, lightly whisked
1 cup Panko bread crumbs
canola oil, for deep-frying
A drizzle of honey
A sprinkle of smoked paprika

Steps:

  • Place the flour, egg, and panko bread crumbs in 3 separate dishes.
  • Dip the cheese cubes into each ingredient to coat, starting with the flour and ending with the panko.
  • Preheat the canola oil in a deep fryer to 375 degrees F, (or in a large heavy-bottomed saucepan, pour enough oil to fill the pan about a third of the way. Heat over medium heat until a deep-frying thermometer inserted in the oil reaches 375 degrees F.) If you don't have a thermometer, a cube of bread will brown in about 3 minutes.
  • Add the breaded cheese to the hot oil, in batches, and deep fry until the cubes are crisp and golden.
  • Remove the cheese from the oil and place on a paper towel-lined baking sheet to absorb the excess oil. Transfer the cheese to a serving platter, drizzle with the honey, and dust with the paprika.

Steps:

  • Cut the cheese into bite sized pieces (1-inch by 1-inch). Leave the cheese's rind on. It acts as a stabilizer for the cheese pieces (don't worry if your cheese doesn't have the rind. This recipe will still work out. It is just more helpful and fancier when the rind is left).
  • Mix together the oil, peppercorns, garlic, and herbs. Pour over cheese in a small bowl. Cover and chill for up to 3 days.

Steps:

  • Combine jalapeno and cilantro together in a bowl. Coat both Manchego cheese wedges with the mixture.
  • Mix all-purpose flour, water, and crushed ice together in a bowl until there are no lumps in the flour. Dip cheese wedges into the batter.
  • Heat vegetable oil in a large saucepan over medium-high heat. Dip cheese wedges into hot oil and fry until batter is crispy and browned, 3 to 4 minutes. Transfer fried cheese to paper towels layered on a plate to drain excess oil.

  • Pour the honey and lavender flowers into a small saucepan over low heat and give it a stir. Once the honey just barely starts to bubble around the edges, turn off the heat and let steep for a minimum of one hour, or up to 24. Pour the honey through a fine mesh sieve and use the back of a spoon to press the lavender flowers to extract all of their flavor and every last drop of honey. Set aside.
  • Remove the rind from the cheese, then cut into cubes. Dredge in flour, then dip in the egg, then coat with panko. Repeat with all the remaining cheese cubes, then place them in the refrigerator to set while you heat up the oil.
  • Heat about 1 inch of vegetable oil in a medium saucepan with high sides. You want the oil to be fairly hot, around 375-400 degrees, so that the outside crisps up before the cheese oozes out. Drop a few breaded cheese cubes in the hot oil, being sure not to overcrowd the pan, and move them around, turning once if needed, until browned and crisp on all sides. Remove with a slotted spoon or strainer on to paper towels to drain, and sprinkle with a little bit of salt while still hot. Repeat with the remaining cheese.
  • To serve, arrange the hot fried cheese cubes on a platter, then drizzle generously with the lavender honey. Skewer with toothpicks and serve immediately.
