- Place cinnamon and cloves on a double thickness of cheesecloth. Gather corners of cloth to enclose spices; tie securely with string., Place water and spice bag in a large saucepan; bring to a boil. Remove from heat. Add tea bags; steep, covered, about 5 minutes according to taste. Discard tea and spice bags., Add remaining ingredients to tea; heat through, stirring to dissolve sugar. Serve immediately.

- In a saucepan, bring 4 cups water to a boil; remove from heat. Add tea bags; steep, covered, 5 minutes., Discard tea bags. Stir in sugar until dissolved; cool slightly. Transfer to a pitcher; cool completely., Add lemonade concentrate and nectar to tea; stir in cold water. Serve over ice with mint.

- Hot-Brewed:
- Bring 8 cups water to a simmer; remove from the heat and add 3 tablespoons loose tea or 6 tea bags. Let steep about 4 minutes, until it's the strength you like. Strain loose tea with a fine-mesh sieve or remove the tea bags. Let cool, then transfer to a pitcher, cover and refrigerate.
- Cold-Brewed:
- Combine 8 cups cold water and 6 tablespoons loose tea or 10 tea bags in a pitcher. Cover and refrigerate 15 to 36 hours, until it's the strength you like. Strain loose tea with a fine-mesh sieve or remove the tea bags.
- Sweet Teas:
- Combine 3/4 cup each sugar and water in a saucepan and add 1 infuser, if desired. Bring to a simmer over medium heat, stirring until the sugar dissolves, then remove from the heat and let cool. Strain the infused syrup through a fine-mesh sieve (you'll get about 1 cup).
- Orange Add 6 strips zest
- Blackberries 1 cup
- Cinnamon 2 sticks
- Lavender 3 tablespoons dried
- Vanilla 1 halved bean
- Mint 3 sprigs
- Ginger 1 cup sliced
- Lemon 8 strips zest
- Nectarine 1 cup chopped
- Cucumber 2 cups chopped
ICED LOUISIANA APRICOT TEA
This recipe was found in the 2009 cookbook, Cool Drinks for Hot Days. Preparation time does not include the time needed for the tea to cool & chill.

Steps:
- In a heatproof pitcher, pour just-boiled water over the tea bags & rosemary, & let steep for 10 minutes before removing & discarding the tea bags.
- Let tea cool, then chill in the refrigerator for 1 hour before removing & discarding the rosemary.
- Stir in the apricot nectar & apricots & pour into 6 tall glasses with 2 ice cubes in each glass.
- Top each drink with some of the sparkling water & ENJOY!

- To make the tea:
- Put tea bags in a heatproof pitcher.
- In a saucepan bring water just to a boil and pour over tea bags. Steep tea 5 minutes and remove tea bags. Cool tea and chill, covered, until cold, about 1 hour.
- Stir in nectar and syrup. Serve tea over ice in tall glasses.
- To make the syrup:
- In a saucepan bring sugar and water to a boil, stirring, and boil until sugar is completely dissolved. Let syrup cool and chill, covered. Syrup may be made 2 weeks ahead and chilled, covered.
- Makes about 2 cups.

- fill water in coffee pot to 12 cups.
- put tea bags where you would put coffee but with no filter.turn on.
- meanwhile in a 1 gallon pitcher add 2 cups of sugar(may adjust to your taste). when tea is done pour it into the pitcher and add enough water to make one gallon.add lemon if you want(in the south we dont add lemon).
- **you can use ice instead of extra water ,fill the pitcher completely with the ice before you put the hot tea in the pitcher. when tea is done pour into the pitcher and stir. refrigerate until cold and enjoy!
