Italian Sausage Chowder image

Steps:

  • Cook sausage in a large sauce pot, crunbling with the edge of a spoon, until no longer pink.
  • Drain, add onion and cook until soft.
  • Add broth, potatoes and garlic, bring to a boil, reduce heat and simmer until potatoes are tender.
  • Add spinach and cook until wilted.
  • Stir in cream, season with salt and pepper and serve.

4 hot Italian sausage links, casings removed
1 large onion, chopped
6 cups chicken broth
3 baking potatoes, diced
2 cloves garlic, minced
2 cups fresh Baby Spinach
1 cup heavy cream
salt & freshly ground black pepper, to taste

  • In a soup kettle or Dutch oven over medium heat, brown the sausage and onion. Slowly add the potatoes, water, parsley, basil, salt and pepper; bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until potatoes are tender. Add remaining ingredients; cook 5-10 minutes longer or until heated through.

Steps:

  • In a skillet, prepare sausage according to package directions.
  • Cool slightly and slice into 1/2 -inch slices.
  • In a soup kettle, melt butter and sauté onions until tender and lightly browned.
  • Add flour, mix until smooth.
  • Stir in stock, over medium heat, stirring constantly, until thickened and bubbly.
  • Reduce heat, add potatoes and cook until almost tender, about 10-12 minutes.
  • Gradually stir in cream, corn and thyme.
  • Continue to simmer for 5-7 minutes, stirring occasionally.
  • Do not allow to boil.
