Steps:

  • cover steam until crunchy.

1 cabbage, chopped
2 carrots, grated
1/2 cup bell pepper, chopped
1 onion, chopped
1 garlic clove, minced
2 tablespoons oil
1/8 teaspoon allspice
1 teaspoon salt
1 teaspoon pepper
1/4 cup water
1/2 scotch bonnet pepper

Jamaican Carrot Cake Recipe - (3.9/5) image

Steps:

  • Combine carrot and sugar, mix well. Add beaten egg, then oil and vanilla and mix well. Combine and sift together the flour, cinnamon, spices, nutmeg, mixed spice, baking soda and salt. Slowly add the dry ingredients to the wet mixture. Pour into greased baking container. Bake for 40 minutes at 355°F or 30 mins if using a shallow container.

3 cups raw carrots, shredded
4 beaten eggs
1 3/4 cups Muscovado sugar or dark brown sugar
2 1/2 cups all-purpose flour
1 1/2 cups oil
1 teaspoon vanilla
1 1/2 teaspoons cinnamon
3/4 nutmeg
1/2 teaspoon mixed spice
1 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • Peel tough outer leaves from cabbage, core the head, and shred cabbage.
  • Heat olive oil in a large skillet over medium high heat; Raise heat to high. Stir onion, green bell pepper, and green onion in the hot oil and cook until vegetables have softened, about 5 minutes, stirring often. Stir thyme, Scotch bonnet pepper, and salt into onion mixture.
  • Mix shredded cabbage and carrots into onion mixture until thoroughly combined, cover skillet, and reduce heat to medium-low. Cook until cabbage has started to soften, about 10 minutes, stirring occasionally. Uncover skillet and stir vinegar and sugar into cabbage mixture; cook and stir until cabbage is tender, about 3 more minutes. Discard Scotch bonnet pepper and thyme sprigs before serving.

  • Melt the butter in a large, heavy saucepan. Add the carrots and onion and season with salt and pepper. Cook over moderately low heat, stirring occasionally, until the vegetables are softened and golden, about 30 minutes. Add the scallions, Scotch bonnet, soy sauce, thyme, ginger, cumin, allspice and nutmeg and stir until fragrant, about 4 minutes. Add the stock, potato and bay leaf and bring to a boil. Cover and simmer over low heat until the potato is tender, about 25 minutes.
  • Remove the soup from the heat and let stand for 10 minutes, then remove the bay leaf. Puree the soup in batches in a blender and return it to the saucepan. Season the soup with the lemon juice and salt and pepper.
  • In a medium bowl, toss the pears with the lemon juice. Fold in the parsley, allspice and nutmeg. Chill the relish.
  • Peel the plantain and thinly slice it on the diagonal. In a large skillet, heat 1/4 inch of oil until shimmering. Add half of the plantain slices and fry over moderate heat until golden brown and crisp, about 2 minutes per side. Drain on paper towels while you fry the rest. Season with salt just before serving.
