Steps:

  • Preheat broiler. Peel bananas and slice them crosswise into 3/4-inch thick slices. Mix the brown sugar and lime juice and toss this with bananas. Spread the sliced bananas in a shallow baking pan and broil, as close to the heat source as possible, until the sugar has melted into a glaze - 2 to 3 minutes. Transfer to a pretty serving bowl and serve immediately - topped with sour cream and nuts if you wish.

2 ripe but not overly ripe bananas
2 tablespoons brown sugar
1 tablespoon or so of fresh lime or lemon juice
Sour cream, optional
Chopped nuts, optional

BAKED BANANAS

Desserts were never a large part of the African diet. For a long time, sugar was really expensive. Desserts were usually reserved for Christmas. This is a fairly healthy and easy to fix dessert. Recipe from Angela Shelf Medearis.

BAKED RUM BANANAS

The Spanish carried bananas with them to the New World in the 1500s, planting the root corms in Central America and the Caribbean islands, where they flourished. With its proximity to Cuba, the Florida Keys encountered the fruit long before the mainland did. Bananas weren't formally introduced to Americans until the 1878 Philadelphia Centennial Exhibition, where, wrapped in foil, they were sold for 10 cents each. From "The Florida Keys Cookbook" and posted for ZWT5.

Steps:

  • NOTE OF CAUTION: As one reviewer stated, she had an issue with blue flames erupting when she opened her oven door due to backdraft. When cooking with alcohol, one must always be cautious ~ please use EXTREME CARE when opening your oven door. As no other reviewers (or me for that matter) have had this problem, I'm hoping it was a fluke occurance, but wanted to post a warning with this recipe.
  • Preheat oven to 450°F Place brown sugar, orange juice, nutmeg, cinnamon, and 1/2 cup rum in a small saucepan over medium heat. Heat until sugar is melted. Remove from heat.
  • Meanwhile, peel bananas and cut them in half crosswise, then lengthwise, forming 4 pieces from each banana. Place bananas in a single layer in a baking dish. Pour hot rum mixture over bananas. Dot bananas with tiny bits of butter, about 3 dots per banana slice. (You can make dessert up to this point just before dinner, cover, and keep at room temperature until entree course is finished.).
  • Bake bananas 10 minutes, uncovered, basting with rum mixture occasionally. Sprinkle remaining 1/8 cup rum over bananas and bake 5 minutes more.
  • TO SERVE: Divide bananas among 4 dinner plates or shallow dessert bowls. Top with a scoop of vanilla ice cream.
  • NOTE: If you can find baby finger bananas in your local supermarket, use them instead of ordinary bananas. They are much more flavorful. Cut each finger banana in half lengthwise. Allow 2 finger bananas per person.

1/4 cup brown sugar
1/2 cup freshly squeezed orange juice
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1/2 cup Meyer's dark rum, plus
1/8 cup Meyer's dark rum
4 large bananas
1 tablespoon butter
vanilla ice cream (to serve)

BAKED BANANA WITH CINNAMON & HONEY (LOW FAT / HEALTHY)

I love banana's but can't stand to eat them when they're over-ripe so I always end up binning some. In a bid to cut down on wastage I now eat this delicious baked (or you could BBQ it) banana combo for my breakfast. I like it so much now that it's gone from being a recipe I use to get rid of my over-ripe banana's to being my standard week-day breakfast! It's so versatile... great on it's own, over porridge or weetabix, on toast, with yogurt, or over ice cream... Mmmmmmm!

Steps:

  • Pre-heat the oven to 200c (or get your BBQ nice and ready if you're BBQing).
  • Either slice the banana up into bite-sized pieces or cut it in half lengthways if you're looking for a smarter presentation or are having an ice cream banana split.
  • Place the banana on an over-sized square of tin foil and sprinkle with cinnamon (to taste).
  • Drizzle 2tsp of honey evenly over the banana and gather up the corners of the foil to create a little banana parcel.
  • Place the parcel in the oven (or on the barbie) and bake for approximately 15mins.
  • NB. Baking time depends on how you prefer your bananas - the more you bake, the more soft and gooey they get and the more the honey caramelises onto them. Personally I don't like mine too over-baked as I prefer the banana to still be a bit hard and the honey to be liquid.
