EASY BAKED OATMEAL
An oatmeal breakfast that is more like a coffee cake. Its easy and my family just loves this! Its a one of our breakfast favorites.

Steps:
- Preheat the oven to 400 degrees F (200 degrees C). Grease and flour a 9x13 inch baking pan.
- In a large bowl, stir together the oats, brown sugar, salt and baking powder. In a separate medium bowl, stir together the eggs, milk, vanilla and canola oil. Pour the wet ingredients into the dry ingredients, and stir until well blended. Spoon into the prepared baking pan, and spread evenly. Sprinkle walnuts over the top.
- Bake for 30 minutes in the preheated oven, or until a knife inserted into the center comes out clean.

- Preheat oven to 350°. In a large bowl, combine oats, brown sugar, baking powder, salt and cinnamon. In another bowl, whisk eggs, milk and butter. Stir into oat mixture until blended., Spoon into a greased 9-in. square baking pan. Bake 40-45 minutes or until set. Serve warm with milk.

JENNY'S BAKED OATMEAL
One of my dear friends shared this recipe with me. It has become a favorite in our home, especially on chillier mornings.

Steps:
- Mix all ingredients (except the additional brown sugar & additional milk) together.
- Pour into a greased square glass baking dish and bake at 350 F for 40-45 minutes, or until a toothpick tests clean.
- Scoop each portion into a small bowl, then pour a splash of milk over each- it should be just enough to be absorbed by the oatmeal (not soupy).
- Sprinkle each with some brown sugar to taste and serve warm.

- Combine water, milk, oats and salt in casserole.
- Let stand for 5 minutes.
- Stir in remaining ingredients.
- Bake covered for 45 minutes.
- Uncover for last 5 minutes of baking.

BAKED OATMEAL WITH BERRIES AND ALMONDS
A fruit-filled take on an Amish recipe, this homey baked oatmeal is crunchy from chopped almonds but still soft and comforting from the buttery egg custard that suffuses the oats. - Heat oven to 350 degrees. Brush a 9x13-inch baking dish generously with some of the butter.
- Scatter berries in bottom of baking dish in an even layer.
- In a small bowl, whisk together oatmeal, almonds, baking powder, and salt.
- In a large bowl, whisk together remaining melted butter, milk, eggs, sugar, vanilla or almond extract, and nutmeg. Whisk oat mixture into milk mixture, then pour it over the berries, shaking the baking dish to evenly distribute liquid and oats.

- Adjust the oven rack to the lower third position and preheat the oven to 350°F (177°C). Spray a 9×9 inch or 11×7 inch baking pan with nonstick spray. Any similar size or shape pan works, though 8×8 inch would be too small. See recipe note for 9×13 inch pan.
