HONEY LAVENDER SODA RECIPE BY TASTY
Here's what you need: honey syrup, dried lavender buds, seltzer water

Steps:
- Add the simple honey syrup and lavender to a small saucepan. Simmer over medium heat for 5 minutes, until slightly reduced. Let cool completely, then strain into an airtight glass container and store in the refrigerator for up to 2 months.
- To serve, mix 1-2 tablespoons of honey lavender syrup with 8 ounces of seltzer water in a glass over ice.

Lavender has been used for centuries as an herbal remedy, and does indeed appear to have antiseptic, anti-bacterial, anti-fungal, anti-inflammatory, anti-convulsive, and last but certainly not least - anti-depressant properties. What a great drink to have on a hot summers day.

Steps:
- 1. Bring to a boil sugar, water, lavender and ginger. Lower to simmer and cook down for 20 min. to half an hour, or until it begins to get a bit syrupy. Cool and strain, add vanilla. You may add a bit of violet or blue dye if you wish (natural ones are available).
- 2. Mix 1 part lavender syrup to 3 parts soda water over ice in highball glasses. Garnish with lime and a few lavender flowers.

- In a medium sized pot, combine blueberries, lavender and 4 cups of water. Place on the stove on medium high heat and bring to a boil.
- Add sugar and stir until it dissolves, then strain the syrup through a fine mesh sieve into a mason jar.
- Squeeze the lemons and strain the juice and add it to the jar then refrigerate the syrup until it's cold. It's also a good idea to chill your soda water as well.
