I modified Loves2Teach's great recipe for Cheesy Broccoli Rice (#67521) to make a main dish casserole without canned soups. Enjoy!

Steps:
- Boil water, adding bouillon cubes.
- Add rice and broccoli and cook covered on low heat for 12-15 minutes.
- While rice is cooking, heat butter over medium heat in medium pan. Add onions and cook until softened and just starting to carmelize, about 8 minutes.
- Add garlic and cook an additional 2 minutes.
- Turn off heat, add thyme, chicken, mayonnaise and milk, stirring to combine.
- Once rice mixture is ready, remove from heat and dump in 9x11" glass pyrex pan.
- Add chicken and sauce mixture, 1 1/2 cups of cheese and mix well.
- Add salt and pepper to taste.
- Sprinkle remaining cheese on top.
- Cook at 350 degrees approx 25 minutes or until cheese is melted.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Boil chicken until tender and shred or cut into bite size pieces. Meanwhile, steam broccoli until crisp but tender.
- In a small bowl mix together the soup and mayonnaise. Set aside. In a 9x13 inch baking dish layer the chicken, broccoli, soup mixture, and cheese. Sprinkle dry stuffing mix over the top and bake in the preheated oven for 25-30 minutes.

LAYERED BROCCOLI-RICE CASSEROLE...(NO CANNED SOUP)
I am not a big fan of cooking with soup in a can, so I searched everywhere to find a broccoli casserole that did not contain soup. I found this site by Paula and it was exactly what I was looking for. I made this and it is so delicious. You can also use the chopped frozen broccoli.

Steps:
- 1. First: Steam (about 3 minutes on HIGH) chopped broccoli and stems until tender but still bright green. Squeeze lemon over broccoli.
- 2. Second: Melt butter in skillet. Add onions, garlic, celery and mushrooms and saute' until softened. Stir in flour and cook about one minute to take away the raw flour taste. Whisk in milk and continue whisking until slightly thickened. Season with salt and pepper. Add 1, 1/2 cup cheese and stir to melt. Season with salt and pepper. Add 1 1/2 cup cheese and stir to melt. Sauce will thicken more as it sits.
- 3. Third: Combine broccoli, rice, and cheese sauce. Turn into 1, 1/2 quart greased casserole dish. Sprinkle with remaining 1/2 cup cheese.
- 4. Bake at 350 degrees F until bubbly. I usually cook for 45 minutes.

- Line bottom of 9x13 glass baking dish with cooked broccoli.
- Top broccoli with cut-up cooked chicken.
- Stir together mayonnaise, sour cream, and chopped onion and spread this mixture over broccoli.
- Sprinkle the cheese over the previous layer, then layer with the sliced water chestnuts.
- For topping, combine the Ritz cracker crumbs and melted butter and sprinkle over the casserole.
- Bake for 30 minutes at 350 degrees (Fahrenheit). Serve hot.

- Preheat the oven to 350 degrees F (175 degrees C).
- Melt 1 stick butter in a large frying pan over medium heat. Add onion and garlic and saute until onion is translucent, about 5 minutes.
- Add flour and stir quickly until it is mixed like Play-Doh®. Quickly add broth, milk, and chicken bouillon; whisk until smooth. Remove from the heat and transfer to a large bowl. Add sour cream and both cheeses; stir until well mixed.
- Place shredded chicken across the bottom of a 9x13-inch casserole dish. Layer cooked broccoli over the chicken and season with salt and pepper. Pour the cheese mixture over top.
- Bake, uncovered, in the preheated oven until hot, about 25 minutes.
- Meanwhile, place crushed cornflakes in a zip-top bag. Add melted butter and seal the bag. Massage with your hands until butter coats all the cornflakes.
- Remove casserole from the oven and distribute cornflake mixture evenly over the top. Bake for 5 more minutes.

- Place a rack in center of oven and preheat oven to 375 degrees F. Lightly grease a deep 9-inch-square baking dish or a 3-quart casserole dish.
- Bring the chicken stock to a boil in a large pot, then add the rice. Return to a boil, add the broccoli to the top of the rice (no need to stir it together), then cover, reduce the heat to low, and let cook 5 minutes. Remove the pot from heat and let sit, covered, for an additional 5 minutes. Most of the rice liquid should be absorbed.
- Meanwhile, heat the olive oil in a Dutch oven or other large deep pot over medium-high. Add the chicken, 1/2 teaspoon salt, 1/2 teaspoon garlic powder, and 1/4 teaspoon black pepper. - BROCCOLI AND CHICKEN: Preheat the oven to 350 degrees F. Cut broccoli into bite-sized florets. Bring a large pot of water to a rolling boil, add in chopped broccoli and cook for 3 minutes. Drain and let stand to thoroughly dry. Chop the chicken into bite-sized pieces to make 3 cups.
- SAUCE: Melt butter in a small pot over medium heat. Once melted, gradually add in flour, whisking constantly until a thick paste forms. Whisk for one minute and then gradually add in 1/3 cup of the milk while continuing to whisk. Gradually whisk in 1/3 cup chicken stock or broth. Pour the sauce over everything, spread to evenly coat, and sprinkle remaining 1/2 cup cheese over top of sauce. In a saucepan over medium-high heat, melt the remaining 2 tablespoons butter. Add the panko and toast, stirring constantly, until crumbs are light brown and toasted. Sprinkle topping evenly over cheese. Cover casserole with foil and bake for 30 minutes or until bubbly around the edges. Remove and serve hot.
