OVEN BAKED SWEET POTATO FRIES
Need a side dish? Bake a batch of sweet potato fries that will please your friends and family. Soybean oil, labeled vegetable oil, helps brown evenly. Season as you please!

- Position rack in upper third of oven and preheat oven to 425 degrees F. Spray baking sheet with non-stick spray.
- Place sweet potatoes and soybean oil in large bowl, toss lightly. Sprinkle with salt, pepper and paprika.
- Arrange potatoes in a single layer on prepared baking sheet, being sure not to overcrowd.
- Bake until tender and golden brown, turning occasionally. Cooking time is 18 to 24 minutes. Cool 5 minutes before serving.

SWEET POTATO FRIES
These addictive seasoned "fries" from Mark Bittman are actually baked, but we promise you won't miss the grease. The spice mix - garlic powder, paprika, salt and black pepper - can be used on regular potatoes as well (you'll just need to increase the baking time a bit).

- Heat the oven to 400.
- Cut the sweet potatoes into sticks 1/4 to 1/2 inch wide and 3 inches long, and toss them with the oil.
- Mix the spices, salt and pepper in a small bowl, and toss them with the sweet potatoes. Spread them out on 2 rimmed baking sheets.
- Bake until brown and crisp on the bottom, about 15 minutes, then flip and cook until the other side is crisp, about 10 minutes. Serve hot.

Steps:
- Peel the sweet potatoes on a cutting board.
- Trim the ends of the potatoes and cut into ½-inch (1 cm) thick matchsticks.
- Add the cut potatoes to a large bowl of water and soak for 1 hour.
- Drain the potatoes in a colander, and rinse with cold water.
- Preheat the oven to 425˚F (220˚C).
- Thoroughly dry the sweet potato matchsticks with paper towels.
- Add the sweet potatoes to a large bowl and sprinkle with cornstarch, tossing until fully coated.
- Drizzle the grapeseed oil over the potatoes, add the paprika, garlic powder, and pepper. Toss to coat.
- Arrange the sweet potatoes in a single layer on a greased, foil-lined baking sheet.
- Bake for 15 minutes. Use a spatula to turn the sweet potato fries over.
- Bake for another 15 minutes.
- Turn off the oven and crack the door open, then let the sweet potatoes rest in the oven for 10 minutes.
- Season the fries with salt.

- Mix Worcestershire sauce, lemon zest, juice, oil, sugar and shallots until blended. Reserve 1/4 cup for later use; pour remaining over chicken in shallow dish. Turn to evenly coat both sides of each chicken breast. Refrigerate I hour to marinate, turning chicken occasionally.
- Heat grill to medium heat and heat oven to 400ºF. Bake fries in oven as directed on package. Meanwhile, remove chicken from marinade; discard marinade. Grill chicken 6 to 8 min. on each side or until done (165ºF), brushing frequently with the reserved Worcestershire sauce mixture for the first 5 min. of the grilling time.
- Serve chicken with the fries.

- Preheat the oven to 425 degrees Fahrenheit with racks in the lower and upper thirds of the oven (make sure the top rack is about 6″ from the heat source and no closer). Line two large, rimmed baking sheets with parchment paper so the fries don’t get stuck to the pans.

(The easiest way to flip them is with a metal spatula. Section by section, scoop up about ten fries and flip them with a quick turn of the wrist.)
