Another recipe from my Cooks of the Green Door cookbook. The recipe was contributed by the Cedars Restaurant. Love dressings with lemon; however,I would probably reduce the amount of olive oil (my preference).

- Shake all ingredients in a tightly covered container. Serve over a salad of mixed greens, cucumbers, and tomatoes.

- 1. Mince garlic. Add salt to garlic. Use flat side of knife and mash the garlic and salt into a "paste". Place in bowl. 2. Add lemon juice, olive oil and pepper to bowl and whisk until well blended.

- In a serving bowl, combine the prepared kidney beans, chickpeas, onion, celery, cucumber, parsley and dill (or mint).
- Make the lemon dressing: In a small bowl, whisk together the olive oil, lemon juice, garlic, salt and pepper flakes until emulsified. Pour dressing over the bean and vegetable mixture and toss thoroughly.
- Serve immediately for the most flavor, or let it marinate in the refrigerator, covered, for a couple of hours or longer. Leftovers should keep well, covered and refrigerated, for several days. If necessary, wake up leftovers with a little sprinkle of salt or drizzle of lemon juice.

- In a mason jar combine the olive oil, lemon juice, garlic cloves, mint, salt and pepper. Seal the mason jar and shake the dressing until combined {or use a small bowl and whisk the dressing}.
- In the bowl with the salad add the romaine lettuce {optional} and toss to combine. Alternatively you can lay a bed of romaine in a bowl and add the Lebanese Salad on top.
