MEXICAN BAKED FISH

Make this Mexican baked fish as hot or mild as you like. Serve with rice, black beans, warm tortillas and margaritas for a festive meal!

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease one 8x12 inch baking dish.
  • Rinse fish fillets under cold water, and pat dry with paper towels. Lay fillets side by side in the prepared baking dish. Pour the salsa over the top, and sprinkle evenly with the shredded cheese. Top with the crushed corn chips.
  • Bake, uncovered, in the preheated oven for 15 minutes, or until fish is opaque and flakes with a fork. Serve topped with sliced avocado and sour cream.

Steps:

  • Preheat oven to 325 degrees.
  • Warm oil in a small saucepan over medium-high heat, saute onion and garlic until tender, about 3 minutes.
  • Add tomatoes, chili powder and red pepper, bring to a boil.
  • Reduce heat; cover and simmer 15 minutes, stir occasionally.
  • In shallow dish, beat egg white and milk until it begins to foam.
  • Place corn meal on wax paper, dip fillets in egg mixture, then in corn meal.
  • Spray a 13 x 9 in baking dish with non-stick cooking spary and place fillets in dish.
  • Pour sauce over fish, sprinkle with cheese and bake about 20 minutes or until fish flakes easily.

  • Preheat oven to 400º. Lightly grease 8x12 inch baking dish.
  • Rinse fish fillets under cold water, and pat dry with paper towels. Lay fillets side by side in the prepared baking dish. Pour the salsa over the top, and sprinkle evenly with the shredded cheese. Top with the crushed corn chips. Veracruz-Style Tilapia (

Steps:

  • Preheat oven to 350 degrees F.
  • In a medium saute pan, heat 1 tablespoon of the olive oil over medium-high heat. Season the fish fillets on both sides with salt and black pepper, to taste. Saute the fillets until they are opaque and just cooked through, about 2 minutes per side. Transfer the fish to a glass baking dish where they fit snugly.
  • In the same saute pan, heat the remaining 2 tablespoons of olive oil over medium-high heat. Add the onion and garlic and cook until the onion is translucent, about 5 minutes. Add the tomatoes, Anaheim chile, bay leaf and oregano and bring the pan to a boil. Reduce the heat to medium, cover and let the sauce simmer until the chiles soften, about 6 minutes. Uncover the pan, add the olives and capers, and cook until the flavors combine, about 4 minutes. Season the sauce with salt and pepper, to taste.
  • Pour the sauce over the fish in the baking dish. Bake until the fish is heated through, about 5 minutes. Remove the dish from the oven, discard the bay leaf and serve.
