Steps:

  • 1.Heat the oil in a deep-fryer to 365 degrees F (185 degrees C). 2.Separate the onion slices into rings, and set aside. In a small bowl, stir together the flour, baking powder and salt. 3.Dip the onion slices into the flour mixture until they are all coated; set aside. Whisk the egg and milk into the flour mixture using a fork. Dip the floured rings into the batter to coat, then place on a wire rack to drain until the batter stops dripping. The wire rack may be placed over a sheet of aluminum foil for easier clean up. Spread the bread crumbs out on a plate or shallow dish. Place rings one at a time into the crumbs, and scoop the crumbs up over the ring to coat. Give it a hard tap as you remove it from the crumbs. The coating should cling very well. Repeat with remaining rings. 4.Deep fry the rings a few at a time for 2 to 3 minutes, or until golden brown. Remove to paper towels to drain. Season with seasoning salt, and serve. Suggestions: FOR NO MESS - I put the flour mix into a big resealable bag, throw all my onion slices in and shake really well until they're all coated. Then take the onions out, add the milk/egg to the bag and stir well. Add the onions a handful at a time, seal bag and mush the bag until all slices are coated, take out with tongs and put on wire rack over foil or wax paper...then put my Panko breadcrumbs into a big tupperware bowl, add the onions a handful at a time (with tongs), put the lid on and shake shake shake. Put the onions from the bowl directly into the hot oil with clean tongs, woo-hoo no mess!!!

1 large onion, cut into 1/4-inch slices
1 1/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 egg
1 cup milk, or as needed
3/4 cup dry bread crumbs or Panko bread crumbs, pulsed in the food processor to make the crumbs super tiny)...not at all greasy with a fabulous crunch!
seasoned salt to taste
1 quart oil for frying, or as needed

Steps:

  • Heat oil in large skillet on stove to frying temperature.
  • Slice onion in rings.
  • Combine baking powder, salt, flour, egg, & water in a large bowl to make the batter. Stir until mixed.
  • Dip onion rings into batter.
  • Immediately place dipped rings into frying oil.
  • Cook until golden brown. You may need to flip the onion ring if your oil isn't very deep.

  • In large bowl, combine buttermilk and ranch dressing; blend well.
  • Add onions which have been separated into rings and toss until well coated.
  • Cover, refrigerate at least 1 hour or overnight.
  • Fill large deep fry pot or electric skillet to no more than half its depth with canola oil. Heat oil to 325°F to 350°F.
  • In large bowl -- combine flour, garlic salt, lemon pepper, and cayenne pepper; blend well.
  • Working in small batches, place onion rings into flour mixture; coat well.

This recipe was sent via email from All-recipes with a video showing onion rings that not only fry up crispy but STAY that way. The reason he reported is in the secret ingredient, instant mashed potatoes in the batter and panko crumbs. As an update: Made these and while the taste is good and they certainly stayed crispy, for some reason I had trouble getting the coating to stick when cooking. I think maybe I didn't have the oil hot enough when I started, or maybe I needed a 2nd breading?? Not really sure, but if anyone has an idea please let me know.

  • Mix flour, cornstarch, mashed potatoes and cayenne together.
  • Add soda and let sit about 10 minutes allowing batter to thicken.
  • Place Panko in seperate plate with salt to taste.

  • 4. Whisk the egg and milk into the flour mixture using a fork. Dip the floured rings into the batter to coat, then let drip a little.
  • 5. Transfer a few at a time to the seasoned bread crumbs, and coat the rings best you can with the bread crumbs.
  • 6. Fry a few at a time for about 2 to 3 minutes, or until golden brown. Remove to paper towels to drain, salt if you wish.
