- Preheat oven to 400°. Cut each potato into 12 wedges. In a large bowl, combine oil, paprika, salt and garlic powder. Add potatoes; toss to coat., Transfer to a greased 15x10x1-in. baking pan. Bake until tender, 40-45 minutes, turning once.

- Preheat the oven to 400 degrees F.
- Cut the potatoes into "fries" by slicing them lengthwise 4 times, and then slicing each slice another 4 or 5 times. Mix the oil, sugar and paprika in a bowl or large freezer bag. Toss the potatoes in the oil and sugar mixture and transfer to a baking sheet in 1 layer. Sprinkle with salt on both sides. Bake 30 to 40 minutes, turning the fries over with tongs about halfway through.

The healthiest way to make fries is to bake them. It saves money and you can't beat the taste. I have been playing around with different ways to bake fries for some time now, and I feel this is the best recipe thus far. Baking time may vary depending on how thick you cut the fries. Enjoy!

- Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil; spray with cooking spray.
- Place sliced potatoes in a colander; sprinkle sugar over potatoes. Set aside until liquid is released from potatoes, 20 to 30 minutes. Drain liquid and dry potatoes well.
- Mix potato slices, olive oil, garlic powder, salt, and black pepper in a resealable bag until evenly coated. Spread coated potato slices in a single layer, leaving space around each potato, on the prepared baking sheet.
- Bake in the preheated oven for 20 minutes; flip fries and continue baking until crisp and browned, about 20 more minutes.

- Heat oven to 425 degrees. Cut potatoes lengthwise into thick slices, then into 1/2-inch-by-1/2-inch-thick strips. Place in a bowl of cold water until ready to use. Drain and dry well on paper towels.
- Toss potatoes with oil and spread out on a dark roasting pan or baking sheet. Scatter thyme over potatoes. Bake for 35 to 40 minutes, turning occasionally, until potatoes are brown and crisp on all sides.

- Preheat the oven to 450 degrees F and place 2 baking sheets in the oven to preheat.
- Put the potatoes into a large bowl and add the oil, salt, garlic powder, paprika and nutmeg. Toss gently to coat and carefully transfer to preheated pans. Place in the oven for 20 minutes, remove and, using a spatula, flip the fries. Return to the oven for an additional 10 to 15 minutes, or until the fries are brown and crispy on both sides. - Adjust oven rack to lowest position; heat oven to 475 degrees. Place potatoes in a large bowl and cover with hot tap water; soak 10 minutes. Meanwhile, coat 18 by 12 inch heavy duty rimmed baking sheet (non stick works well) with 4 tablespoons oil and sprinkle evenly with 3/4 teaspoon salt and 1/4 teaspoon pepper; set aside.
