SOY GLAZED BUTTERNUT SQUASH

These make great appetizers or a yummy side dish. Adapted from BH&G magazine. To make it easier to peel squash, cut squash in half, seed, then place in microwave for about 1-2 minutes. The skin will be softer and easier to peel.

Ingredients:
- 1 1/2 lbs butternut squash, peeled, seeded, and cut into 3/4-inch cubes (or other winter squash)
- 1 teaspoon orange peel, finely shredded
- 1/2 cup orange juice
- 2 scallions, finely chopped (or green onions)
- 3 tablespoons soy sauce
- 1 tablespoon brown sugar
- 2 teaspoons oil
- 1/4 teaspoon crushed red pepper flakes (optional)
Steps:
- Place squash in a lightly greased 13x9x2-inch baking pan.
- In a small bowl combine orange peel, orange juice, scallions, soy sauce, brown sugar, oil, and red pepper flakes.
- Drizzle over squash, tossing to coat.
- Roast, uncovered, in a 425*F. oven for 20-25 minutes or until squash is tender, stirring several times. Stir cubes again before serving.
- Place a toothpick in each squash cube, if using for appetizers. Serve warm.
- Makes about 48 appetizers.

Ingredients:
- 2 lbs butternut squash
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup brown sugar
- 1/4 teaspoon nutmeg
- 3 tablespoons butter, melted
Steps:
- Peel, seed and slice the squash. Place in a pot with tight fitting cover and steam until squash is nearly tender, about 12-15 minutes. Drain well.
- Preheat oven to 400ºF.
- Arrange squash in one or two layers in greased shallow baking dish.
- Mix sugar, spices and salt, and sprinkle over the squash.
- Drizzle with melted butter. Bake until squash is tender and somewhat glazed, 15-20 minutes.
- For deeper glaze, broil a few minutes.

Ingredients:
- 1 1/2 lbs butternut squash
- 1/4 teaspoon mace
- 1/4 teaspoon allspice
- 1 teaspoon ground cinnamon
- 1 tablespoon maple syrup
- 1/2 teaspoon salt
- 2 teaspoons melted butter
Steps:
- Cut squash in half, scrape out seeds and fiber. Chunk in 2" pieces.
- Boil or steam (steaming preserves its high amounts of vitamin C and A better) 20 minutes (boil) or 30 (steam) until tender.
- Cool slightly, and slip skin off pieces. Spoon flesh into blender, add remaining ingredients and process till smooth. Goes well with roast birds.
