POOR MAN'S HASH

The only memories I have about this recipe is that everyone who has ever eaten it thinks it's great! The recipe is over 75 years old, and I learned it from my mother. -Dorothy Broyles, Peterstown, West Virginia

Poor Man's Hash image

Steps:

  • In a large skillet, melt butter over medium-high heat. Stir in the remaining ingredients. Cook and stir for 10-12 minutes or until browned and potatoes are tender.

1 tablespoon butter
2 cups cubed peeled potatoes
5 ounces SPAM, finely chopped
3/4 cup 2% milk
1 small onion, chopped
1 tablespoon minced fresh parsley
1/4 teaspoon pepper
1/8 teaspoon salt

I saw the original recipe for this in the "America's Best Brand Name Recipes" cookbook. And I "tweaked" a couple of things in it to more suit my tastes. If desired serve with your favorite biscuit or cornbread recipe.If you don't like Spam©, just substitute the same amount of ham or other cooked meat. Submitted to "ZAAR" on September 24, 2007.

Steps:

  • In a large non stick skillet over medium heat, melt margarine and cook onion until softened.
  • Add potatoes and cook until lightly browned.
  • Then add spam and veggies, sprinkle with garlic powder, salt and pepper.
  • Stir occasionally until meat is slightly browned.
  • Top with cheese if desired, and let set for 5 minutes.

3/4 cup chopped sweet onion
3 tablespoons butter or 3 tablespoons margarine
2 cups frozen cubed hash brown potatoes, thawed
1 (12 ounce) can Spam, diced into small cubes
1 1/2 cups frozen peas and carrots
1/2 teaspoon ground black pepper
1/2 teaspoon salt (to taste)
3/4 teaspoon garlic powder
1 cup of shredded sharp cheddar cheese (optional)

Steps:

  • In a medium sized bowl,scramble eggs until pale yellow in color and fluffy.
  • Set eggs aside.
  • In a medium sized skillet over medium heat add oil.
  • When oil is hot but not smoking add onions.
  • Saute' onions for 3 to 5 minutes,add potatoes,and sprinkle with salt and pepper.
  • Cook potatoes until lightly browned.
  • Add SPAM© and cook until meat has a slightly browned color.
  • Pour eggs over meat and potatoes,let eggs sit on potatoes for about 3 to 5 minutes.
  • Stir eggs into potatoes until desired doneness for eggs is reached.

1/3 cup canola oil
1/3-1/2 cup chopped white onion
2 cups frozen cubed hash brown potatoes, thawed
6 ounces Spam, diced into small cubes
4 large eggs
1 teaspoon salt
1 1/2 teaspoons ground black pepper

  • Cook the veggies. Add 1 tablespoon of oil and chopped onions to the skillet. Sauté onions for 3 minutes over medium heat until soft and translucent. Add potatoes and ½ teaspoon salt. Cook potatoes for 5 minutes or until a fork goes through the potatoes easily. Add 1 to 2 tablespoons of oil, corn, and squash. Cook for 3 to 4 minutes or until the vegetables are golden.
  • Ranch-ify the hash. Add reserved spam and ranch seasoning to the skillet. Mix everything together and continue cooking for a few minutes. Slide onto a plate for serving.
  • Put an egg on it. Fry an egg in the same skillet, so it’ll pick up more flavor. We suggest sunny side up so it’s easy to mix the runny yolk in with the hash, but you do you.
